Ingredients
- 3-4 lbs beef chuck roast
- 2 cups carrots, chopped
- 1 cup onions, chopped
- 1 cup celery, chopped
- 1 can (14.5 oz) crushed tomatoes
- 2 cups beef broth
- 2 tsp Italian herbs
- Salt and pepper to taste
- 2 tbsp olive oil for searing
Instructions
- Season the beef chuck roast with salt and pepper.
- Heat olive oil in a large pan over medium-high heat, then sear the roast on all sides until nicely browned.
- Transfer the roast to a slow cooker or oven-safe pot.
- Surround the meat with chopped carrots, onions, and celery.
- Pour crushed tomatoes and beef broth over the roast, then sprinkle Italian herbs on top.
- For slow cooker: Cook on low for 8 hours, or for oven: braise at 325°F (163°C) for approximately 2.5 hours.
- Check for doneness—the meat should be fork-tender.
- Allow the roast to rest for at least 15 minutes before slicing and serving.
