Description

A hearty Italian pot roast filled with tender beef, rich sauce, and flavorful vegetables, perfect for family gatherings.


Ingredients

  • 3-4 lbs beef chuck roast
  • 2 cups carrots, chopped
  • 1 cup onions, chopped
  • 1 cup celery, chopped
  • 1 can (14.5 oz) crushed tomatoes
  • 2 cups beef broth
  • 2 tsp Italian herbs
  • Salt and pepper to taste
  • 2 tbsp olive oil for searing


Instructions

  1. Season the beef chuck roast with salt and pepper.
  2. Heat olive oil in a large pan over medium-high heat, then sear the roast on all sides until nicely browned.
  3. Transfer the roast to a slow cooker or oven-safe pot.
  4. Surround the meat with chopped carrots, onions, and celery.
  5. Pour crushed tomatoes and beef broth over the roast, then sprinkle Italian herbs on top.
  6. For slow cooker: Cook on low for 8 hours, or for oven: braise at 325°F (163°C) for approximately 2.5 hours.
  7. Check for doneness—the meat should be fork-tender.
  8. Allow the roast to rest for at least 15 minutes before slicing and serving.

Adjust the liquid levels based on the cooking method used to prevent drying out.
