Ingredients
- 2 lbs chicken breasts, cubed
- 1 cup pineapple chunks
- 1 bell pepper, sliced
- 3 cloves garlic, minced
- 1 inch fresh ginger, minced
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- Salt and pepper to taste
Instructions
- Sauté garlic and ginger in a pan.
- Combine sautéed garlic and ginger with chicken, pineapple, bell pepper, soy sauce, and brown sugar in the crockpot.
- Cook on high for 4 hours or low for 6-8 hours.
- Serve over rice, in tacos, or over salad.
Notes
For added flavor, sear the chicken before adding to the crockpot. Adjust sweetness by modifying brown sugar amount.
