Description

A delightful blend of sweet and savory flavors, this slow-cooked dish transports you to a tropical paradise and is perfect for family gatherings or weeknight dinners.


Ingredients

  • 2 lbs chicken breasts, cubed
  • 1 cup pineapple chunks
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • Salt and pepper to taste


Instructions

  1. Sauté garlic and ginger in a pan.
  2. Combine sautéed garlic and ginger with chicken, pineapple, bell pepper, soy sauce, and brown sugar in the crockpot.
  3. Cook on high for 4 hours or low for 6-8 hours.
  4. Serve over rice, in tacos, or over salad.

Notes

For added flavor, sear the chicken before adding to the crockpot. Adjust sweetness by modifying brown sugar amount.
