Ingredients
- 1 lb lean ground turkey
- 2 medium sweet potatoes, cubed
- 1 medium onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 2 cups diced tomatoes (canned)
- 2 cups chicken broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Brown the ground turkey in a large pot over medium-high heat until fully cooked.
- Add the diced onions, bell peppers, and minced garlic; cook until softened.
- Stir in cubed sweet potatoes, diced tomatoes, chicken broth, and spices.
- Bring to a boil, then reduce heat and let simmer for about 30 minutes, or until sweet potatoes are tender.
