Description
A quick and delicious salmon dish with a crunchy sun-dried tomato and Parmesan crust, ready in just 25 minutes.
Ingredients
- 1 filet Wild Salmon
- 1 cup Breadcrumbs
- 1/2 cup Parmesan Cheese
- 1/4 cup Sun-Dried Tomatoes
- 1/4 cup Fresh Basil
- 2 cloves Garlic
- 1 tbsp Extra Virgin Olive Oil
- to taste Salt
- to taste Pepper
- 2 cups Fresh Green Beans
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix together the breadcrumbs, Parmesan cheese, sun-dried tomatoes, fresh basil, chopped garlic, olive oil, salt, and pepper.
- Place the salmon filet skin-side down on a baking sheet lined with parchment paper.
- Top the salmon with the breadcrumb mixture, pressing it gently to stick.
- Arrange the fresh green beans around the salmon on the baking sheet. Drizzle them with a bit of olive oil, and sprinkle with salt and pepper.
- Bake in the oven for about 15-20 minutes, or until the salmon is cooked through and the crust is golden brown.
- Remove from the oven and let it cool slightly before serving.
Notes
For added flavor, try switching the herbs or adding crushed red pepper for heat.
