Description

A quick and delicious salmon dish with a crunchy sun-dried tomato and Parmesan crust, ready in just 25 minutes.


Ingredients

  • 1 filet Wild Salmon
  • 1 cup Breadcrumbs
  • 1/2 cup Parmesan Cheese
  • 1/4 cup Sun-Dried Tomatoes
  • 1/4 cup Fresh Basil
  • 2 cloves Garlic
  • 1 tbsp Extra Virgin Olive Oil
  • to taste Salt
  • to taste Pepper
  • 2 cups Fresh Green Beans


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix together the breadcrumbs, Parmesan cheese, sun-dried tomatoes, fresh basil, chopped garlic, olive oil, salt, and pepper.
  3. Place the salmon filet skin-side down on a baking sheet lined with parchment paper.
  4. Top the salmon with the breadcrumb mixture, pressing it gently to stick.
  5. Arrange the fresh green beans around the salmon on the baking sheet. Drizzle them with a bit of olive oil, and sprinkle with salt and pepper.
  6. Bake in the oven for about 15-20 minutes, or until the salmon is cooked through and the crust is golden brown.
  7. Remove from the oven and let it cool slightly before serving.

Notes

For added flavor, try switching the herbs or adding crushed red pepper for heat.
