A cozy, slightly spicy casserole that combines seasoned ground beef, tomatoes, and cornbread for a comforting meal perfect for gatherings.
Ingredients
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 (15 oz) can diced tomatoes (or Rotel)
- 1 can black beans (optional)
- 1 cup frozen corn
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tbsp baking powder
- 1 cup milk
- 1 egg
- 1/3 cup oil
- 1–1 1/2 cups shredded cheddar
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Brown the ground beef with onion and garlic in a skillet over medium-high heat for 8–10 minutes until caramelized.
- Stir in chili powder, cumin, tomatoes, beans, and corn; simmer for a few minutes.
- Transfer the beef mixture to a 9×13-inch baking dish.
- In a separate bowl, mix cornmeal, flour, baking powder, milk, egg, and oil to form a thick batter.
- Spread the batter over the beef mixture evenly.
- Bake for 22–28 minutes until the cornbread topping is golden and set.
- Let rest for 10 minutes before serving.
Notes
Top with chopped cilantro, sliced green onions, and a dollop of sour cream or Greek yogurt. Serve with sides like salad or corn tortillas.
