Description

A cozy, slightly spicy casserole that combines seasoned ground beef, tomatoes, and cornbread for a comforting meal perfect for gatherings.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 (15 oz) can diced tomatoes (or Rotel)
  • 1 can black beans (optional)
  • 1 cup frozen corn
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1 cup milk
  • 1 egg
  • 1/3 cup oil
  • 1–1 1/2 cups shredded cheddar
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown the ground beef with onion and garlic in a skillet over medium-high heat for 8–10 minutes until caramelized.
  3. Stir in chili powder, cumin, tomatoes, beans, and corn; simmer for a few minutes.
  4. Transfer the beef mixture to a 9×13-inch baking dish.
  5. In a separate bowl, mix cornmeal, flour, baking powder, milk, egg, and oil to form a thick batter.
  6. Spread the batter over the beef mixture evenly.
  7. Bake for 22–28 minutes until the cornbread topping is golden and set.
  8. Let rest for 10 minutes before serving.

Notes

Top with chopped cilantro, sliced green onions, and a dollop of sour cream or Greek yogurt. Serve with sides like salad or corn tortillas.
