Description

A comforting and satisfying meal that swaps traditional buns for fluffy baked potatoes, filled with a delicious turkey Sloppy Joe mixture.


Ingredients

  • 4 large Russet potatoes
  • 1 pound lean ground turkey
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 cup Sloppy Joe sauce
  • Shredded cheese (optional, for topping)
  • Chopped green onions (optional, for garnish)
  • Sour cream (optional, for serving)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and poke holes in the potatoes, then bake them for about 45-60 minutes until fully tender.
  3. In a skillet, sauté the onion and bell pepper until soft.
  4. Add the ground turkey and cook until browned, then stir in the Sloppy Joe sauce.
  5. Once the potatoes are done, slice them open and fluff the insides with a fork.
  6. Stuff the potatoes with the turkey Sloppy Joe mixture.
  7. Top with cheese, green onions, and sour cream, if desired.
