A comforting and satisfying meal that swaps traditional buns for fluffy baked potatoes, filled with a delicious turkey Sloppy Joe mixture.
Ingredients
- 4 large Russet potatoes
 - 1 pound lean ground turkey
 - 1 onion, diced
 - 1 bell pepper, diced
 - 1 cup Sloppy Joe sauce
 - Shredded cheese (optional, for topping)
 - Chopped green onions (optional, for garnish)
 - Sour cream (optional, for serving)
 
Instructions
- Preheat your oven to 400°F (200°C).
 - Wash and poke holes in the potatoes, then bake them for about 45-60 minutes until fully tender.
 - In a skillet, sauté the onion and bell pepper until soft.
 - Add the ground turkey and cook until browned, then stir in the Sloppy Joe sauce.
 - Once the potatoes are done, slice them open and fluff the insides with a fork.
 - Stuff the potatoes with the turkey Sloppy Joe mixture.
 - Top with cheese, green onions, and sour cream, if desired.
 - Serve warm and enjoy!
 
Notes
For added flavor, consider mixing Worcestershire sauce or hot sauce into the turkey filling. Store leftovers tightly wrapped in the refrigerator for up to 3 days.
