Ingredients
- 6 bone-in, skin-on chicken thighs
- 2 cups apple cider
- 1/4 cup brown sugar
- 2 tablespoons apple-cider vinegar
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1 sprig of thyme
- Sliced cabbage for slaw
- Julienned apple for slaw
- Grated carrot for slaw
- Cider-mustard vinaigrette for slaw
Instructions
- Season the chicken thighs and sear them skin-side down in a hot, oven-safe skillet until golden.
- Transfer the skillet to a preheated 400°F (204°C) oven for 18–22 minutes, or until cooked through.
- While the chicken rests, simmer apple cider, brown sugar, vinegar, mustard, garlic, and thyme in a saucepan until reduced to a glaze.
- Toss the sliced cabbage, julienned apple, grated carrot, and vinaigrette for the slaw.
- Serve the chicken glazed, spooning extra sauce over the top and plating over the slaw.
