Description

These chewy sugar cookies feature soft centers and perfectly browned edges, making them ideal for holiday decorating and cookie swaps.


Ingredients

  • 1 cup (226g) unsalted butter, room temperature
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed brown sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1/2 cup (60g) cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Granulated sugar for rolling


Instructions

  1. Cream together the butter, granulated sugar, and brown sugar in a stand mixer for 3–4 minutes until light.
  2. Add the egg, egg yolk, and vanilla extract to the mixture and mix until incorporated.
  3. In a separate bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt.
  4. Fold the dry ingredients into the butter mixture until just combined.
  5. Chill the dough for 30–60 minutes.
  6. Scoop 1.5 tablespoons of dough, roll in granulated sugar, and place 2 inches apart on parchment-lined baking sheets.
  7. Bake at 350°F (175°C) for 9–11 minutes until edges are set and centers look slightly underdone.
  8. Cool on the pan for 5 minutes before transferring to a wire rack.

Notes

For best results, weigh your flour and chill the dough to prevent spreading. Experiment with various spices or citrus for added flavor.
