Ingredients

  • 2 chicken breasts
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon ginger, minced
  • 2 bell peppers, chopped
  • 2 carrots, shredded
  • 2 cups cabbage, shredded
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • Toasted sesame seeds, for garnish
  • Fresh cilantro, for garnish


Instructions

  1. Marinate chicken breasts in soy sauce, ginger, and sesame oil for at least 15 minutes.
  2. Sear the chicken in a hot skillet for 5-7 minutes per side until golden brown and cooked through.
  3. While chicken rests, chop bell peppers, carrots, and cabbage.
  4. Whisk together honey and rice vinegar for the dressing.
  5. Toss the chicken and veggies together in a large bowl with the dressing.
  6. Garnish with toasted sesame seeds and fresh cilantro before serving.
