Description

A dreamy comfort food twist that combines caramelized onions with creamy mashed potatoes, perfect for any occasion.


Ingredients

  • 4 large Russet or Yukon Gold potatoes, peeled and chopped
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • 1/2 cup full-fat coconut milk (or non-dairy milk of choice)
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Boil the chopped potatoes in salted water until fork-tender, about 20 minutes.
  2. In a separate pan, heat olive oil over low heat and add the sliced onions. Cook slowly, stirring occasionally, until golden and caramelized, about 20-25 minutes.
  3. Once the potatoes are cooked, drain them and mash them in a large bowl.
  4. Add the caramelized onions and coconut milk to the mashed potatoes and mix until creamy. Adjust seasoning with salt and pepper as desired.
  5. Serve warm, garnished with fresh herbs if desired.

Notes
