A dreamy comfort food twist that combines caramelized onions with creamy mashed potatoes, perfect for any occasion.
Ingredients
- 4 large Russet or Yukon Gold potatoes, peeled and chopped
- 1 large onion, thinly sliced
- 2 tablespoons olive oil
- 1/2 cup full-fat coconut milk (or non-dairy milk of choice)
- Salt, to taste
- Pepper, to taste
Instructions
- Boil the chopped potatoes in salted water until fork-tender, about 20 minutes.
- In a separate pan, heat olive oil over low heat and add the sliced onions. Cook slowly, stirring occasionally, until golden and caramelized, about 20-25 minutes.
- Once the potatoes are cooked, drain them and mash them in a large bowl.
- Add the caramelized onions and coconut milk to the mashed potatoes and mix until creamy. Adjust seasoning with salt and pepper as desired.
- Serve warm, garnished with fresh herbs if desired.
Notes
