A quick and delicious vegan pasta dish featuring garlic and olive oil, perfect for busy weeknights.
Ingredients
- 300g spaghetti or linguine
- 1/2 cup extra virgin olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley or basil, for garnish
Instructions
- Cook the pasta according to package instructions in salted boiling water until al dente.
- In a separate pan, heat the olive oil over medium-low heat.
- Add the minced garlic and red pepper flakes to the oil, sautéing gently until fragrant but not browned.
- Reserve a cup of pasta water, then drain the pasta.
- Toss the drained pasta with the garlic oil, adding reserved pasta water as needed to coat the pasta.
- Serve immediately, garnished with fresh herbs and a sprinkle of red pepper flakes.
Notes
For added flavor, you can include sautéed vegetables or a sprinkle of vegan parmesan before serving.
