Description
A warm and creamy vegan potato soup with cauliflower and a hint of smoked paprika, perfect for chilly days.
Ingredients
- 2 large potatoes, peeled and chopped
- 1 medium head of cauliflower, chopped
- 1 large onion, diced
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 2 teaspoons smoked paprika
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
- Vegan sour cream (optional)
Instructions
- Chop the potatoes and cauliflower into even pieces.
- Sauté the onions and garlic in a pot until fragrant.
- Add the chopped potatoes and cauliflower to the pot.
- Pour in the vegetable broth and add smoked paprika, salt, and pepper.
- Simmer until the vegetables are tender.
- Use an immersion blender to blend the soup until smooth.
- Serve in warm bowls and garnish with fresh herbs or vegan sour cream.
Notes
For a thicker soup, blend less; for a creamier result, blend more. Adjust seasoning to taste.
