Description

A warm and creamy vegan potato soup with cauliflower and a hint of smoked paprika, perfect for chilly days.


Ingredients

  • 2 large potatoes, peeled and chopped
  • 1 medium head of cauliflower, chopped
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 2 teaspoons smoked paprika
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)
  • Vegan sour cream (optional)


Instructions

  1. Chop the potatoes and cauliflower into even pieces.
  2. Sauté the onions and garlic in a pot until fragrant.
  3. Add the chopped potatoes and cauliflower to the pot.
  4. Pour in the vegetable broth and add smoked paprika, salt, and pepper.
  5. Simmer until the vegetables are tender.
  6. Use an immersion blender to blend the soup until smooth.
  7. Serve in warm bowls and garnish with fresh herbs or vegan sour cream.

Notes

For a thicker soup, blend less; for a creamier result, blend more. Adjust seasoning to taste.
