A delicious and visually stunning dish of roasted beets and sweet potatoes topped with tangy feta cheese.
Ingredients
- 2 medium beets, peeled and cubed
- 2 medium sweet potatoes, peeled and cubed
- 3 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- 1 cup feta cheese, crumbled
Instructions
- Preheat your oven to 400°F (200°C).
- Wash, peel, and cube the beets and sweet potatoes into uniform sizes.
- Toss the veggies with olive oil, salt, and pepper on a baking sheet.
- Roast in the oven for 40-45 minutes, until tender and caramelized.
- In the last 5 minutes, sprinkle feta over the top and let it soften.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat in a 350°F (175°C) oven for 15-20 minutes.
