Description

A warm and comforting chili made with tender chicken, creamy beans, and bold spices. Perfect for cozy nights.


Ingredients

  • 3-4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cans (15 oz each) great northern or cannellini beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 1 can (4 oz) diced green chiles
  • 8 oz cream cheese
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • Fresh cilantro, for garnish
  • Juice of 1 lime


Instructions

  1. Dice the chicken breasts into bite-sized pieces.
  2. Heat oil in a large pot over medium heat; sauté onions and garlic until translucent (about 3 minutes).
  3. Add the diced chicken, ground cumin, and chili powder; cook until golden brown (about 5-7 minutes).
  4. Stir in the white beans and chicken broth; mix well.
  5. Lower the heat and add cream cheese; stir until melted (about 3 minutes).
  6. Mix in the diced green chiles and lime juice; let it simmer on low heat for about 20 minutes.
  7. Serve hot, garnished with fresh cilantro.

Notes

Use pre-cooked rotisserie chicken to save time. You can adjust the spices according to your taste. Garnish with fresh cilantro for added flavor.
