Elegant and easy White Chocolate Raspberry Cheesecake Bars with a crunchy graham crust and silky cheesecake, swirled with bright raspberry.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 6 tablespoons melted butter
- 2 tablespoons sugar
- 16 oz (450 g) cream cheese
- 2/3 cup sugar
- 2 large eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla
- 4 oz (115 g) white chocolate, melted and slightly cooled
- 1 cup raspberry purée (made from 1 cup raspberries + 2 tablespoons sugar)
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, pulse together graham cracker crumbs, melted butter, and sugar.
- Press the mixture into a lined 9×9-inch pan to form the crust.
- In a mixing bowl, beat the cream cheese and sugar until smooth.
- Add eggs one at a time, then mix in sour cream and vanilla.
- Fold in the melted white chocolate until combined.
- Spoon half the cheesecake batter over the crust.
- Dollop the raspberry purée over the batter.
- Pour the remaining batter and swirl with a knife.
- Bake for 35–40 minutes until edges are set and center jiggles slightly.
- Chill for 4 hours or overnight before slicing.
Notes
For best results, use room-temperature ingredients and avoid overmixing after adding the eggs.
