Description

A hearty and healthy soup packed with flavor and vegetables, perfect for chilly nights.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 2 stalks celery
  • 3 cloves garlic
  • 1 pound ground turkey
  • 1 pound baby potatoes
  • 2 medium carrots
  • 1 can green beans
  • 2 tablespoons tomato paste
  • 1 can diced tomatoes
  • 1 can white beans
  • 4 cups chicken or vegetable broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 leaf bay leaf
  • 1/4 cup Parmesan cheese
  • 2 tablespoons fresh parsley


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and celery, cooking until soft – about 5 minutes.
  3. Stir in the garlic and cook for another minute.
  4. Add the ground turkey, breaking it into smaller pieces, and cook until browned.
  5. Mix in the potatoes, carrots, green beans, tomato paste, and diced tomatoes.
  6. Pour in the broth and add the white beans, Italian seasoning, salt, pepper, red pepper flakes, and bay leaf.
  7. Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes until the vegetables are tender.
  8. Remove the bay leaf and stir in the Parmesan cheese and fresh parsley.

Notes

For a thicker soup, mash some of the white beans before adding them. You can also make this soup vegetarian by replacing the ground turkey with lentils or more beans.
