Description
A hearty and healthy soup packed with flavor and vegetables, perfect for chilly nights.
Ingredients
- 2 tablespoons olive oil
- 1 medium yellow onion
- 2 stalks celery
- 3 cloves garlic
- 1 pound ground turkey
- 1 pound baby potatoes
- 2 medium carrots
- 1 can green beans
- 2 tablespoons tomato paste
- 1 can diced tomatoes
- 1 can white beans
- 4 cups chicken or vegetable broth
- 2 teaspoons Italian seasoning
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1 leaf bay leaf
- 1/4 cup Parmesan cheese
- 2 tablespoons fresh parsley
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and celery, cooking until soft – about 5 minutes.
- Stir in the garlic and cook for another minute.
- Add the ground turkey, breaking it into smaller pieces, and cook until browned.
- Mix in the potatoes, carrots, green beans, tomato paste, and diced tomatoes.
- Pour in the broth and add the white beans, Italian seasoning, salt, pepper, red pepper flakes, and bay leaf.
- Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes until the vegetables are tender.
- Remove the bay leaf and stir in the Parmesan cheese and fresh parsley.
Notes
For a thicker soup, mash some of the white beans before adding them. You can also make this soup vegetarian by replacing the ground turkey with lentils or more beans.
