Ingredients
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes (14.5 oz)
- 4 cups vegetable broth
- 2 cups pasta shells
- 1 tsp cumin
- 1 tsp chili powder
- Salt, to taste
- Pepper, to taste
- Fresh cilantro, for garnish
- Avocado slices, for garnish
- Lime wedges, for serving
Instructions
- In a large pot, sauté onions, garlic, and bell peppers over medium heat until fragrant and softened.
- Add the diced tomatoes, vegetable broth, cumin, chili powder, salt, and pepper. Stir and bring to a simmer.
- Once simmering, add the pasta shells and cook until al dente, according to package instructions.
- Serve hot, garnished with fresh cilantro and avocado slices, with lime wedges on the side.
Notes
For a spicier kick, consider adding crushed red pepper flakes or diced jalapeños during sautéing.
