Description

A delightful combination of rich broth, tender vegetables, and satisfying pasta shells that warms the heart and palate.


Ingredients

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups vegetable broth
  • 2 cups pasta shells
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt, to taste
  • Pepper, to taste
  • Fresh cilantro, for garnish
  • Avocado slices, for garnish
  • Lime wedges, for serving


Instructions

  1. In a large pot, sauté onions, garlic, and bell peppers over medium heat until fragrant and softened.
  2. Add the diced tomatoes, vegetable broth, cumin, chili powder, salt, and pepper. Stir and bring to a simmer.
  3. Once simmering, add the pasta shells and cook until al dente, according to package instructions.
  4. Serve hot, garnished with fresh cilantro and avocado slices, with lime wedges on the side.

Notes

For a spicier kick, consider adding crushed red pepper flakes or diced jalapeños during sautéing.
