Description

A hearty and festive beef stew perfect for Halloween parties or family nights, made with affordable cuts of beef and fresh seasonal vegetables.


Ingredients

  • 2 lbs Beef (stew cuts), choose affordable cuts for better flavor when simmered
  • 3 large Carrots, cut into chunks for hearty bites
  • 4 medium Potatoes (waxy), maintains shape during cooking
  • 2 stalks Celery, adds crunch and flavor
  • 1/2 cup Apple Cider, for a hint of sweetness
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 4 cups Beef Broth
  • 1 tsp Fresh Thyme (optional)
  • 1 Bay Leaf (optional)
  • Salt and Pepper, to taste
  • Handful of Flour (optional, for thickening)


Instructions

  1. In a large pot, brown the beef over medium-high heat until golden.
  2. Add the diced onion and minced garlic, cooking until fragrant.
  3. Pour in the beef broth, then add the carrots, potatoes, celery, and any herbs if using.
  4. Allow the stew to simmer for at least an hour, stirring occasionally. Add additional broth if too thick.
  5. Season with salt and pepper to taste.
  6. Serve hot, floating mozzarella ‘eyeballs’ or gummy worms on top for a fun touch.

Notes

Fresher veggies yield more flavor. Stews can be made ahead and taste even better the next day.
