Description
A hearty and festive beef stew perfect for Halloween parties or family nights, made with affordable cuts of beef and fresh seasonal vegetables.
Ingredients
- 2 lbs Beef (stew cuts), choose affordable cuts for better flavor when simmered
- 3 large Carrots, cut into chunks for hearty bites
- 4 medium Potatoes (waxy), maintains shape during cooking
- 2 stalks Celery, adds crunch and flavor
- 1/2 cup Apple Cider, for a hint of sweetness
- 1 Onion, diced
- 3 cloves Garlic, minced
- 4 cups Beef Broth
- 1 tsp Fresh Thyme (optional)
- 1 Bay Leaf (optional)
- Salt and Pepper, to taste
- Handful of Flour (optional, for thickening)
Instructions
- In a large pot, brown the beef over medium-high heat until golden.
- Add the diced onion and minced garlic, cooking until fragrant.
- Pour in the beef broth, then add the carrots, potatoes, celery, and any herbs if using.
- Allow the stew to simmer for at least an hour, stirring occasionally. Add additional broth if too thick.
- Season with salt and pepper to taste.
- Serve hot, floating mozzarella ‘eyeballs’ or gummy worms on top for a fun touch.
Notes
Fresher veggies yield more flavor. Stews can be made ahead and taste even better the next day.
