Ingredients

  • 1 loaf challah bread
  • 3 ripe tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil plus more for brushing
  • 1 tablespoon balsamic vinegar
  • Sea salt, to taste
  • Crushed red pepper, for garnish (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice challah into ½-inch thick pieces.
  3. Brush both sides with olive oil.
  4. Place bread slices on a baking sheet and toast in the oven until golden and crisp, about 10 minutes.
  5. In a bowl, mix diced tomatoes, basil, garlic, olive oil, balsamic vinegar, and sea salt.
  6. Let the mixture sit for at least 10 minutes to meld flavors.
  7. Layer the tomato mixture onto the toasted challah slices before serving.
  8. Garnish with crushed red pepper if desired and serve warm.
