Description

A vibrant summer salad bursting with sweet corn, crunchy peppers, and a zesty dressing.


Ingredients

  • 4 ears of fresh corn, grilled
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 small red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste


Instructions

  1. Grill the corn for 5-7 minutes until lightly charred, then let it cool.
  2. Chop the bell peppers, red onion, and cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  4. Cut the kernels off the cooled corn and mix all ingredients in a large bowl.
  5. Serve chilled or at room temperature.

Notes

Let the salad sit for a while to allow flavors to meld; it’s even better the next day.
