Description
A vibrant summer salad bursting with sweet corn, crunchy peppers, and a zesty dressing.
Ingredients
- 4 ears of fresh corn, grilled
 - 1 red bell pepper, chopped
 - 1 yellow bell pepper, chopped
 - 1 small red onion, diced
 - 1/4 cup fresh cilantro, chopped
 - 3 tablespoons lime juice
 - 2 tablespoons olive oil
 - Salt to taste
 - Pepper to taste
 
Instructions
- Grill the corn for 5-7 minutes until lightly charred, then let it cool.
 - Chop the bell peppers, red onion, and cilantro.
 - In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
 - Cut the kernels off the cooled corn and mix all ingredients in a large bowl.
 - Serve chilled or at room temperature.
 
Notes
Let the salad sit for a while to allow flavors to meld; it’s even better the next day.
