Description

A fresh and vibrant salad bursting with flavors from charred corn, creamy dressing, and a hint of lime, perfect for summer gatherings and casual barbecues.


Ingredients

  • 4 ears of corn, husked
  • 1 ripe avocado, diced
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup crumbled feta cheese (optional)
  • 1 lime, juiced
  • 3 tablespoons mayonnaise
  • 1 teaspoon chili powder
  • Salt and pepper to taste


Instructions

  1. Roast the corn on a grill or in the oven until golden and slightly charred.
  2. Let the corn cool, then cut the kernels off the cob.
  3. In a large bowl, combine the roasted corn, diced avocado, red onion, and cilantro.
  4. In a separate bowl, mix lime juice, mayonnaise, chili powder, salt, and pepper to create the dressing.
  5. Pour the dressing over the corn mixture and gently stir to combine.
  6. Serve chilled or at room temperature, garnished with feta if desired.

Notes

For a vegan version, skip the cheese and use avocado oil instead of mayonnaise.
