Description
A refreshing and flavorful rice dish that complements various main courses and can be enjoyed on its own.
Ingredients
- 1 cup Long Grain Rice
- 2 tablespoons Extra Virgin Olive Oil
- 2 cups Low-Sodium Chicken Stock
- 1 medium Onion
- 2 cloves Garlic
- 1/4 cup Fresh Lemon Juice
- 1/2 teaspoon Turmeric
- 1 teaspoon Fine Sea Salt
- 1/4 cup Flat-Leaf Italian Parsley
- 1 tablespoon Dill
- 1 teaspoon Lemon Zest
Instructions
- In a medium saucepan, heat the extra virgin olive oil over medium heat.
- Add the chopped onion and garlic to the pan. Cook until the onion becomes translucent, about 3-4 minutes.
- Stir in the rice and cook for an additional minute, allowing it to slightly toast.
- Pour in the chicken stock and add the lemon juice, turmeric, and sea salt. Stir well.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 15-20 minutes, or until the rice is tender and has absorbed all the liquid.
- Once done, remove the pot from heat and fluff the rice with a fork. Add the lemon zest, parsley, and dill. Mix gently.
- Serve warm.
Notes
Rinse the rice before cooking to avoid stickiness. For a vegan option, replace chicken stock with vegetable broth.
