Description

A refreshing and flavorful rice dish that complements various main courses and can be enjoyed on its own.


Ingredients

  • 1 cup Long Grain Rice
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 cups Low-Sodium Chicken Stock
  • 1 medium Onion
  • 2 cloves Garlic
  • 1/4 cup Fresh Lemon Juice
  • 1/2 teaspoon Turmeric
  • 1 teaspoon Fine Sea Salt
  • 1/4 cup Flat-Leaf Italian Parsley
  • 1 tablespoon Dill
  • 1 teaspoon Lemon Zest


Instructions

  1. In a medium saucepan, heat the extra virgin olive oil over medium heat.
  2. Add the chopped onion and garlic to the pan. Cook until the onion becomes translucent, about 3-4 minutes.
  3. Stir in the rice and cook for an additional minute, allowing it to slightly toast.
  4. Pour in the chicken stock and add the lemon juice, turmeric, and sea salt. Stir well.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 15-20 minutes, or until the rice is tender and has absorbed all the liquid.
  6. Once done, remove the pot from heat and fluff the rice with a fork. Add the lemon zest, parsley, and dill. Mix gently.
  7. Serve warm.

Notes

Rinse the rice before cooking to avoid stickiness. For a vegan option, replace chicken stock with vegetable broth.
